Virtual Supper Club's 'Thyme for Turkey' Holiday Preview !

How did it get to be November??? This year has flown by and here come the 'big two' holidays ... again! For our family, Thanksgiving and Christmas really are the biggies. We make it a point to get together in one spot, make way too much food, joke around and play Scrabble or Bananagrams, try to get some decent family photos, drink good wine and beers, and catch up on all the news. Occasionally, there are forays to the movies or an afternoon out at the antique stores or shops, an evening out at the local pub/inn, short hikes to walk off the big meals, playing in the back yard with the dogs, and hauling wood in for the fires. Ah, family life in a rural backwater!


Of course, the weeks prior to the holidays find me planning just what we''ll eat and scoping out recipes for desserts, snacks, and the sides for the big turkey dinners. Turkey is king, though. It's the tradition and there's very little messing with that aspect of the holiday meal! That's why I am so interested in this month's Virtual Supper Club's theme of  'Thyme for Turkey'! I'm betting that I'll get some excellent ideas for the holiday menu ... so let's see what everyone is bringing to the table! Then, a few words about this soup and it's crunchy and tasty topper ...

Soup- Susan's Golden Winter Soup with Turkey Croquettes



Now, about this soup ... it's a perfect choice for me, as there were abundant butternut squash from our garden this year and my husband was a lucky hunter earlier in the season and bagged a wild turkey on the land adjacent to our property. We cut up the turkey into parts and divided the breast into small two-serving packages for use in various recipes. The turkey croquettes were a good recipe choice for the theme and the topper to this thick creamy soup! You might choose turkey cutlets from the cooler of your meat market for your Thanksgiving soup topper. Both recipes are very easy to make. The soup can be made a day or so ahead of your dinner party and the croquettescan be put together the night before, refrigerated, fried up before serving the soup course and kept warm in the oven while the soup is re-heated.

It's a pretty dish when presented! So go for it! And here's a thought. using leftover Thanksgiving turkey, you could make the soup as a day after lunch too ... just sayin'. So, here are the recipe links.

  2. I baked a squash yesterday. No turkey but I might make some of Val's crisps to accompany this. Looks great.

  4. WOW - this looks amazing. I have 3 squash in the cellar from our CSA and some turkey in the freezer. Now to find some time to cook. :-)
